The student is the focus of my efforts as a trainer. Unlike many other food safety classes, a Customized Performance Training Food Safety Class is filled with activities that will enrich the participants learning experience. My classes are designed to inspire, influence, and motivate the learner to think differently about their role in food safety, and to challenge people to be a Food Safety Leader. Read on and you will see why I believe this training is so critical.

Today's Food Safety Challenge

The CDC estimates that every year, over 76 million people in the United States experience a foodborne illness. Thousands die, and countless others experience long term effects from the illness. More disturbing news; over 90% of these illnesses and deaths are caused by untrained and/or unsafe food handlers! The vast majority of foodborne illnesses and outbreaks are preventable. 

Case In Point: This Was Avoidable!
E:coli 0157:H7 contaminated beef was sent from a meat processing plant in Fort Morgan, CO to a buffet restaurant franchise in a suburb of Milwaukee, Wisconsin. At the restaurant, the beef was ground up in a meat grinder, located next to a cutting board used to prepare fresh fruits and vegetables. Contaminated juices from the beef splashed onto the cutting board, causing the watermelon to be contaminated with the E:coli 0157:H7 bacteria. Over 500 people were sickened, and one little girl - 3 year-old Brianna Kriefall - died as a result of eating the contaminated food. The managers of the restaurant were "certified" in food safety - their license was hanging on the wall - but they were not Food Safety Leaders! I know this because a true Food Safety Leader would have seen the cutting board next to the meat grinder - an obvious food handling violation - and said "Hey, move the cutting board!" 

We Need More Food Safety Leaders!  
It's not enough to merely send employees to a food safety class, take the exam, and hang a certificate on the wall. When food handlers and supervisors complete the food safety training course, they should depart feeling empowered in both knowledge and spirit to be a Food Safety Leader back on the job. Because ultimately, it will be up to them to take actions that will prevent sickness and the loss of life.
The Food Safety Leaders of tomorrow will be the ones who will move the cutting board.
